If ebony isn't available, bone does a good job...but I prefer replacing dark with dark. A bone nut just doesn't look right to me if the original was ebony. Any of the harder woods will work so don't hesitate to use stuff like Ipe or Coco-Bolo, any of the various Rosewoods or whatever you have on hand.

just for the record Clifford Essex used both ,at least on the Paragon Model.
