The title of this tune refers to a cheese dish, the recipe of which appears on the attached music cover. Minus the addition of tomatoes, it's similar to Welsh Rarebit which is popular in the UK. I'd never heard of it until I came across this music. It is a very well written piece of music and one of those tunes that could have been intended for the banjo. My suggested fingering for the trio pairs up the 2nd and 4th strings and this is repeated at the end from bar 86 but an octave higher and using 1st and 3rd strings. It's a good tune and one I enjoy playing. The score and midi are in the library...Steve.
